02 - Add pitted dates, honey or maple syrup, vanilla extract, and salt to the processor. Blend until the mixture comes together and holds its shape when pressed.
03 - Check the mixture texture. If too dry to hold together, add 1 to 2 teaspoons of water and blend again briefly.
04 - Scoop approximately 1 tablespoon of mixture at a time and roll into smooth, even balls using clean hands.
05 - Roll each ball in mini chocolate chips, shredded coconut, or chopped nuts if desired, pressing gently to adhere.
06 - Place brownie bites in the refrigerator for at least 15 minutes to set and achieve optimal fudgy texture.
