Garlic Butter Zucchini Skewers (Printable)

# What You'll Need:

→ Vegetables

01 - 3 medium zucchinis, sliced into 1/2-inch rounds
02 - 1 red bell pepper, cut into 1-inch pieces (optional)
03 - 1 small red onion, cut into 1-inch chunks (optional)

→ Garlic Butter

04 - 4 tablespoons unsalted butter
05 - 3 garlic cloves, minced
06 - 2 tablespoons fresh parsley, chopped
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon black pepper
09 - 1/2 teaspoon lemon zest

→ For Skewers & Garnish

10 - 8 wooden or metal skewers
11 - Lemon wedges, for serving

# How To Make:

01 - If using wooden skewers, submerge them in water for at least 20 minutes to avoid burning over the grill.
02 - Set grill to medium-high, approximately 400°F.
03 - In a small saucepan over low heat, melt the butter. Add minced garlic and sauté for 1 minute until aromatic. Remove pan from heat and incorporate parsley, lemon zest, salt, and pepper.
04 - Alternately thread zucchini, bell pepper, and red onion onto the skewers.
05 - Generously brush skewered vegetables with half of the garlic butter mixture.
06 - Arrange skewers on the grill. Cook each side for 3 to 5 minutes, rotating as needed, until vegetables are tender and lightly charred.
07 - Transfer skewers from grill and immediately brush with remaining garlic butter. Serve warm with lemon wedges.
