Agar Agar Fruit Jelly (Printable)

A light, vegan dessert made with agar agar and fresh mixed fruits. Perfectly refreshing and healthy.

# What You'll Need:

→ Jelly Base

01 - 2 cups water
02 - 1 1/2 teaspoons agar agar powder
03 - 1/2 cup granulated sugar
04 - 1/2 cup fruit juice (orange, apple, or mango)

→ Fresh Fruits

05 - 1/2 cup diced strawberries
06 - 1/2 cup diced kiwi
07 - 1/2 cup diced mango
08 - 1/2 cup diced pineapple
09 - 1/4 cup blueberries

# How To Make:

01 - Wash, peel, and dice all fruits into small, bite-sized pieces. Set aside in a bowl.
02 - Combine water and agar agar powder in a medium saucepan. Whisk thoroughly to dissolve the powder completely.
03 - Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat and simmer for 2 minutes until the agar agar is fully dissolved.
04 - Stir in the sugar and mix until completely dissolved. Remove from heat, then add the fruit juice and mix well. Let cool for 2-3 minutes, but do not allow it to set.
05 - Distribute the diced fruits evenly in a silicone mold or glass dish, ensuring they are spread in a single layer.
06 - Gently pour the agar agar mixture over the fruits, ensuring all pieces are covered. Let cool to room temperature, then refrigerate for at least 45 minutes until fully set.
07 - Unmold the jelly or cut into cubes. Serve chilled for best flavor and texture.

# Expert Tips:

01 -
  • The texture is somewhere between a delicate pudding and a firm jelly, making it endlessly satisfying to eat.
  • You can prepare it in under twenty minutes of active time, then let the refrigerator do the rest of the work.
02 -
  • Fresh pineapple and kiwi contain enzymes that can prevent proper setting unless you blanch them briefly first.
  • Agar agar sets more firmly than gelatin and holds its shape well at room temperature.
03 -
  • Silicone molds release perfectly without any greasing or prep work needed.
  • If your liquid starts setting before you pour it, gently rewarm over low heat for thirty seconds.
